Chicken enchilada dinner recipe for 2

Ingredients

  • 1 16oz enchilada sauce
  • 2 cups shredded rotisserie chicken
  • ½ cup frozen vegetables
  • 6 flat soft tortilla wraps
  • 1 16oz shredded cheese
  • ½ onion diced
  • 1 10 oz diced tomato and green chiles
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 400 degrees and set middle rack.
  • In a buttered, 8-inch square oven-safe baking dish, coat with enchilada sauce
  • Heat oil and sauté onion until translucent in a pan for about 3 minutes.
  • to pan, add shredded chicken and about ¼ of the enchilada sauce. Heat through and stir for 2 minutes.
  • Incorporate the chopped tomato and chiles and frozen vegetables into the pan and season to your liking. Remove from heat and let cool 5 minutes
  • Prepare your soft tortillas by adding shredded cheese and top with chicken mixture.

  • Roll carefully as snugly as possible and place the roll with seam side down

  • You should have 6 rolls for an 8inch square casserole dish
  • pour the rest of the enchilada sauce evenly over the enchiladas
  • cover with shredded cheese and bake for 30 minutes or till cheese is golden brown. Add a dollop of sour cream and serve with salad or more veggies.
