Preheat oven to 400 degrees and set middle rack.
In a buttered, 8-inch square oven-safe baking dish, coat with enchilada sauce
Heat oil and sauté onion until translucent in a pan for about 3 minutes.
to pan, add shredded chicken and about ¼ of the enchilada sauce. Heat through and stir for 2 minutes.
Incorporate the chopped tomato and chiles and frozen vegetables into the pan and season to your liking. Remove from heat and let cool 5 minutes
Prepare your soft tortillas by adding shredded cheese and top with chicken mixture.
Roll carefully as snugly as possible and place the roll with seam side down
You should have 6 rolls for an 8inch square casserole dish
pour the rest of the enchilada sauce evenly over the enchiladas
cover with shredded cheese and bake for 30 minutes or till cheese is golden brown. Add a dollop of sour cream and serve with salad or more veggies.
