Ingredients
1 cup air fried tater-tots
4 eggs
1/4 cup milk
butter for the pan
1/2 cup chopped onions
1/2 cup chopped red peppers
1/2 cup sliced mushrooms
1/2 cup fresh spinach (optional)
salt and pepper to season
favorite shredded cheese
In a casserole or baking dish, place tater-tots evenly and mash to flatten evenly on the bottom and slightly on the sides.
Add butter to a moderate to high heated pan. To it add onions, peppers and mushrooms. Sautee for about 5 minutes or until translucent. Season to desired taste.
Preheat oven to 350 degrees and set to middle rack. In a separate bowl whisk eggs and milk and about 1/4 cup shredded cheese.
Pour egg mixture into the casserole dish and top with shredded cheese. Bake for 40 to 45 minutes or until top is golden brown.
You can eat it on it’s own or have it with toast. Add sliced avocado and a side of salsa and have it for brunch. If you want something more than just a fried egg or cereal, this dish is tasty and sure to fill you up.
