For the dough

Ingredients:

2 cups all-purpose flour
1/2 teaspoon salt

Instructions:

In a large bowl, mix the flour and salt. Add the cold butter pieces and rub them into the flour using your fingertips until the mixture resembles coarse crumbs.

Gradually add water, a little at a time, and mix until the dough comes together. Be careful not to overwork the dough. Form it into a ball, cover it with plastic wrap, and refrigerate for 30 minutes to allow it to rest.

Preheat your oven to 375°F (190°C) if baking the empanadas. If frying, heat oil in a deep pan or pot.
Sprinkle flour on the table and roll out the chilled dough to about 1/8 inch. Use a round cookie cutter or a small bowl to cut out circles of dough.

Place a spoonful of your chosen filling in the center of each dough circle, leaving a small border around the edges. Be sure not to overfill to avoid difficulties in sealing the empanadas.

Then fold dough over filling to make a half-moon shape. You can crimp the edges by folding and pressing with your fingers.

If baking, place the empanadas on a baking sheet lined with parchment paper. Beat 1 egg and brush the top for a golden finish. Bake for about 20-25 minutes or until the empanadas are lightly golden.
