Ingredients
- 1 16oz enchilada sauce
- 2 cups shredded rotisserie chicken
- ½ cup frozen vegetables
- 6 flat soft tortilla wraps
- 1 16oz shredded cheese
- ½ onion diced
- 1 10 oz diced tomato and green chiles
- 1 tbsp olive oil
Instructions
- Preheat oven to 400 degrees and set middle rack.
- In a buttered, 8-inch square oven-safe baking dish, coat with enchilada sauce
- Heat oil and sauté onion until translucent in a pan for about 3 minutes.
- to pan, add shredded chicken and about ¼ of the enchilada sauce. Heat through and stir for 2 minutes.
- Incorporate the chopped tomato and chiles and frozen vegetables into the pan and season to your liking. Remove from heat and let cool 5 minutes
- Prepare your soft tortillas by adding shredded cheese and top with chicken mixture.
- Roll carefully as snugly as possible and place the roll with seam side down
- You should have 6 rolls for an 8inch square casserole dish
- pour the rest of the enchilada sauce evenly over the enchiladas
- cover with shredded cheese and bake for 30 minutes or till cheese is golden brown. Add a dollop of sour cream and serve with salad or more veggies.
